My innovation to a simple parantha Its yummy , nutritious, snacky , crispy Any guesses? This parantha is a snack on its own, one can eat just like that without any accompaniments.

Ingredients

Serves : 2
  • 3 cups atta


  • 1 cups left over khichdi- -green dal and rice khichdi


  • 1 tsp chili-ginger paste


  • 1/2 tsp cumin powder


  • 1 tsp coriander seeds powder


  • 1 tsp red chili powder


  • 1/2 tsp garam masala


  • 2 pinch heeng


  • 1/2 tsp turmeric powder


  • 1 tsp moti saunf powder


  • 2 tbsp oil


  • 1/4 tsp salt or to taste


  • 2 cups to roast- - mustard oil

Directions

  • In a large bowl add flour, leftover khichdi, and all powdered spices, heeng, chili-ginger paste, salt, garam masala, oil and mix well to combine everything, and knead to smooth dough.
  • Add 2-3 tbsp of water if required.
  • Cover dough with a damp clean cloth and keep aside for 5 minutes.
  • Add 1 tsp oil and knead again for a minute
  • Take a ball of dough,flatten it and dust with flour.
  • Roll this into a roti of a big size , now smear oil on the roti and dust with flour, and fold again, roll into a parantha.
  • Heat a tawa and put parantha, apply oil.
  • Now flip again and apply oil.
  • Roast both sides until golden brown and parantha gets crispy
  • Repeat the same steps for rest of the dough.
  • Serve the Crispy Snacky Parantha with raita or plain curd, or pickles or just like that. Enjoy!!!
