Bitter gourd chips is a very good side dish for people who don't like this vegetable. Most of us avoid this healthy vegetable because of its bitterness. But the crunchy & crispy chips version makes an excellent choice as a snack for evening tea.

Ingredients

Serves : 4
  • 6 nos bittergourd / karela


  • 1/2 cups gram flour


  • 3 tsp rice flour


  • 1 tsp red chilly powder


  • 1 tsp chat masala powder


  • 1 cups oil to deep fry


  • 1 tsp salt to taste

Directions

  • Wash the bittergourd and pat dry.
  • Slice off from both ends and then cut the bittergourd into thin rings.
  • Put these thin rings in a container and sprinkle 1 tsp of salt over them.
  • Mix them well,so that the rings are fully coated with salt.
  • Keep aside for an hour.
  • The salt will cause the bittergourd to give off all its water and some of its bitterness.
  • Now drain all excess water from the bittergourd and rinse in clean water.
  • In a bowl, take gram flour, rice flour, red chilly powder, chat masala, salt and 1 tsp of oil.
  • Add the sliced bitter gourd to the flour mix one by one.
  • Sprinkle few drops of water so that the masala coats all the pieces well.
  • Heat the cooking oil in a deep pan on medium flame.
  • When hot , add the masala coated slices 6-7 at a time & fry till crispy and golden in colour.
  • Stir often in between with a ladle.
  • drain them out on absorbent paper.
  • Serve hot hot karela chips with tea or coffee. Or Store in an air tight container when cooled. It stays crisp for a long time. Enjoy
