Corn Chowder with Pasta

  • 1 cup Sweet corn kernels

  • 1.5 cup Milk

  • 2 tbsps Extra Virgin Olive oil

  • 1/2 cup Onion, chopped

  • 1/2 cup Button Mushrooms, chopped

  • 1/4th cup Carrot, diced

  • 1/4th cup Green Capsicum, chopped

  • 5 Black or Green Olives

  • 15 Elbow Pasta

  • 1 tsp Dried Thyme

  • 1/2 tsp All purpose flour

  • 7 Black peppercorns (ground)

  • 1 tsp Salt or to taste

  • 1/2 tsp Red pepper flakes

  • 1.5 cups Pasta Stock

  • 1/2 tsp Lemon juice


  • Boil pasta as per instructions and retain the stock.
  • In preheated olive oil, add garlic and sauté till sticky. Now add onion and sauté till translucent.
  • Add the veggies except corn kernels. Season it with some salt and thyme.
  • Sauté the vegetables till they start releasing all the juices.
  • Sprinkle flour on the veggies and sauté for ten seconds.
  • Now add milk and bring it to boil. Lower the flame and stir occasionally so that it doesn't stick to the bottom.
  • Now, coarsely grind half cup sweet corn kernels and add. Also add the remaining sweetcorn kernels, olives, all the seasoning and pasta stock.
  • Cook for 10 minutes on low flame or till the rawness goes and you achieve the desired consistency. Check for seasoning.
  • Add pasta and give a nice mix. Switch off the flame.
  • Finish it with lemon juice. Cover it for 5 mins then add coriander leaves.
  • Serve hot with garlic bread
