Clean Chicken Breast in running water, cut into cubes and set aside
Mince Garlic and Chop Onions and Spring Onions (set aside)
Hydrate Dried Shiitake mushroom in water, thinly slice when hydrated (set aside)
In a pan, Saute Garlic, Onions and Shiitake Mushroom until soft in Sesame Oil
Add Hoisin Sauce, Oyster Sauce, Salt and Pepper (set aside)
Boil water with Salt in a Large Pot
Add Penne Pasta when water is boiling and cook until al-dente
Add Pasta in the Pan with Sauce, add Pasta water to thin out the consistency of the sauce. The starch in the pasta water helps coat the Pasta better.
Top with Spring Onions and Toasted Pine Nuts
