  • 1/2 Kilo Penne Pasta

  • 1 Piece Chicken Breast

  • 1 Pack of Dried Shiitake Mushroom

  • 250ml Oyster Sauce

  • 3-5 Stalks Green Onion

  • 3 Tbsp Hoisin Sauce

  • 1 Pinch of Salt

  • 2 pinches of pepper

  • 1 Pot of Water (for Boiling Pasta)

  • 1 Piece White Onion

  • 3 to 5 Cloves of Garlic

  • 1 Tbsp Sesame Oil (Optional)

  • 100 grams toasted Pine Nuts (optional)


  • Clean Chicken Breast in running water, cut into cubes and set aside
  • Mince Garlic and Chop Onions and Spring Onions (set aside)
  • Hydrate Dried Shiitake mushroom in water, thinly slice when hydrated (set aside)
  • In a pan, Saute Garlic, Onions and Shiitake Mushroom until soft in Sesame Oil
  • Add Hoisin Sauce, Oyster Sauce, Salt and Pepper (set aside)
  • Boil water with Salt in a Large Pot
  • Add Penne Pasta when water is boiling and cook until al-dente
  • Add Pasta in the Pan with Sauce, add Pasta water to thin out the consistency of the sauce. The starch in the pasta water helps coat the Pasta better.
  • Top with Spring Onions and Toasted Pine Nuts
  • Serve!
