1 cup boiled kidney beans/ rajma
1 cup small shape maccrooni or any other kind of pasta
1 medium sized onion
1/2 cup corn kernels (fresh or frozen)
1/2 cup pea (fresh or frozen)
1 tsp garlic paste
4 tbsp olive oil/ butter
1 tsp salt or to taste
1/2 tsp black pepper powder or as needed
3-4 cup water or as needed
1 tsp oregano
First of all boil pasta as per packet instructions. Drain and keep aside.
Finely chop all the veggies except corn kernels and peas. Feel free to add your favourite veggies.
Grind kidney beans with little water and make fine paste. If you want you can add 2-3 tbsp of whole kidney beans in soup too. Feel free to add your favourite beans along with kidney beans. The reason why we are making paste of kidney beans is that we don't need to add any type of thicker to the soup if we add the paste. So it's a healthy healthy soup han. 😉
Heat oil/butter in a pan. Add garlic paste saute for 30 seconds. Add finely chopped onion and saute for 30 seconds. Add finely chopped tomatoes and saute for 1-2 minutes.
Add remaining veggies and saute for 2 more minutes.
Add kidney beans paste and saute for 2 minutes. Add Maccrooni and saute for 1 minute. Add salt, oregano and pepper according your taste.
Add water as needed. Cook it for 10-15 minutes or until you get the desired consistency.
Switch off the flame and transfer to serving bowl. Serve hot. Enjoy☺
