Ingredients

  • Gram Flour (besan) 1 Cup Mango Puree 1 Cup Red Chilli powder 1 tsp Salt, to taste Cooking Oil 1/2 tablespoon Mustard Seeds 1 teaspoon Sesame Seeds 1 teaspoon shredded Coconut 2 tablespoon Asafoetida (hing), a pinch Sprinkles, Mint Leaves (for garnishing)

  • Curd (Yogurt) 1 Cup

    Mix all the ingredients required for khandvi in a mixing bowl using a whisk to form a smooth batter. Rest it for about 10-15 minutes. In a microwave safe bowl microwave it for 2 minutes and then stir so no lumps are formed. Repeat this step 2 minutes more for every two minutes.

    Once it is very thick, take a test by pouring the mixture. If it falls immediately (or having running consistency then it’s not done. Microwave for another-1 minute. Once the batter is ready, Take a foil paper and spread khandvi on it or on the greased inverted Thali / kitchen counter. Spread into a thin layer using a palette knife. Once it is cool, cut it into strips and roll them tightly. When they splutter, pour it over the Mango flavored khandvi. Garnish it with chopped Sprinkles/cilantro/ Mint and grated coconut.

    Heat 1 tablespoon of oil in a pan and add mustard seeds, sesame seeds, green chilies and asafoetida. Serve Mango flavored khandvi mint / tamarind Chutney or enjoy it as a morning /evening snack with hot Tea. My Tip: Take a test by pouring the mixture. If it falls immediately (or having running consistency then it’s not done. Microwave for another-1 minute. Or if by spreading a spoon on kitchen platform it is not rolling then cook again for 1-2 minutes.
