In a pan heat oil and add the finely chopped garlic and ginger.
Add the sliced onions and sauté until translucent.
Tip in the diced chicken and sauté for a minute.
Now add the thinly sliced radish, amaranth leaves and spring onions.
Add 2-3 cups water, 1 tsp soya sauce and stir.
Knead the maida adding a little salt and water as needed.
Roll it out like a cylinder.
Pull out the dough little by little between your thumb and index finger. Flatten it and keep adding to the boiling soup.
Cook the soup until the noodles are done. Add water if needed.
