Ingredients

Serves : 2
  • Onions - 1


  • Ginger - 1 small piece


  • Garlic- 3-4 cloves


  • Chicken breast - 1/2 cup (diced)


  • Radish - 1/2 ( about 8-9 thin slices)


  • Spring onions - 1/4 cup


  • Oil - 2 tbsps


  • Water - 2-3 cups


  • Soya sauce - 1 tsp


  • Amaranth leaves - 1/2 cup (use any greens)


  • Maida - 1 cup (to make noodles)


  • Salt - 1/2 tsp or as needed

Directions

  • In a pan heat oil and add the finely chopped garlic and ginger.
  • Add the sliced onions and sauté until translucent.
  • Tip in the diced chicken and sauté for a minute.
  • Now add the thinly sliced radish, amaranth leaves and spring onions.
  • Add 2-3 cups water, 1 tsp soya sauce and stir.
  • Knead the maida adding a little salt and water as needed.
  • Roll it out like a cylinder.
  • Pull out the dough little by little between your thumb and index finger. Flatten it and keep adding to the boiling soup.
  • Cook the soup until the noodles are done. Add water if needed.
