Carrot Veggie Upma South Indian Style

roasted rava/suji 1 cups
medium onion, chopped finely 1 nos
green chilly, chopped 1 nos
chana dal 1 tsp
urad dal white 1/2 tbsp
medium carrot grated 2 nos
ginger grated 1/2 inch
garam masala 1/2 tsp
sambar masala 1/2 tsp
water 2 cups
mustard seeds 1 tsp
curry leaves 1 sprig
cashewnuts broken into 4 pcs 7-8 nos
oil 1 tbsp
Lemon juice 1 tsp
Cilantro leaves chopped 1 tbsp
salt or as required 1 tsp
In a pan, heat oil, add mustard seeds, add chana, urad dal and cashews
Fry till they become golden in colour.
Add onions , grated carrot, chillies, ginger, curry leaves and fry till they become transparent.
Fry for a minute and add water.
When the water comes to a boil, lower the flame and add semolina and salt to it.Keep on stirring.
If the mixture looks dry, then add some more water.simmer for 2 -3 minutes
Add the sambar masala, and garam masala
Sprinkle lemon juice
Do the plating, garnish with carrot, cilantro and serve hot wid coconut or green chutney
