In a mixing bowl take maida add oil and salt and mix well. Add water in small portions and knead to make tight and stiff dough.
Cover and keep the dough aside for 20 min to rest. Mean while lets prepare the stuffing.
Heat 1tsp oil in a pan and to it add jeera as it spultter add ginger,green chilli and cook.
To it add haldi,coriander pwd, red chilli pwd, garam masala,mango pwd and mashed potatoes stir and mix the ingredients well. stuffing is ready.
Now pinch 7-8 small to medium size dough and shape these round.Roll out the dough ball to about 8-10 inch diameter round .
Cut it in square and keep the potato stuffing in center and fold it as shown in pics.After this heat enough oil in a wok or pan to deep fry the flower samosas.
Slide 4 samosa in a pan and deep fry untill they get brown and crispy from both side keep the flame low medium .
Drain out the samosas from the pan and serve it with sauce.
