First make a stiff dough for samosa .mix maida,salt,ajwain and oil and with help of water make a dough .cover it and keep aside.
In pan take oil and add jeera as it turn brown add dhania pwd,red chilli pwd,garam masala,kaju,kishmish,potato,amchur pwd and salt and mix .stuffing is ready.
Now roll the dough in big size roti and cut rounds with help of katori.cut half the small round and fold it like a cone and fill the stuffing and seal it.make all and deep fry on medium flame. Samosa is ready
For kadhi take besan in big bowl and add curd,haldi,chilli pwd,salt and water .with help of whisk mix it so that no lump are formed.
In a wok heat ghee add hing,jeera,methi dana,rai,green chilli. let it crackle now add the whisked besan mix in it and stir it continously.let it simmer on low flame for 20 min.kadhi is ready.
for tempering heat ghee in a pan add rai,slit green chilly, whole red chilly and curry patta.as it crackle turn gas off and pour this in kadhi.
Add samosa in gravy just u are going to serve .
