Veg Macaroni Lo Mein/Chinese Macaroni

Ingredients

Serves 2

  • macaroni pasta 1 cups

  • chopped Carrot 1/4 cups

  • chopped Green Capsicum 1/4 cups

  • sweet corn 1/4 cups

  • spring onion 4-5 nos

  • chopped garlic 1 tsp

  • chopped ginger 1 tsp

  • Olive oil 1 tbsp

  • Tomato sauce 2 tbsp

  • dark soy sauce 1 tsp

  • green Chilli sauce 1 tsp

  • Salt as per taste 1 tbsp

  • black Pepper powder 1/2 tsp

  • cube processed cheese, grated 1 nos

Directions

    In a large pot, heat 4 cups water, to this add 1 tbsp salt & 1 tsp oil. When water boils, add macaroni pasta & cook till the pasta is done. Strain excess water & wash under tap water to stop the cooking process.

    Also boil the sweet corn till its well cooked.

    Chop the spring onion bulbs & green separately

    Heat olive oil in a pan.Add ginger garlic & saute for half minute

    Next add the chopped onion bulbs, saute for a minute on high.

    Add a large pinch of salt & mix

    Then add chopped carrots & capsicum. Saute on high till it turns soft.

    Next add black pepper powder, tomato sauce, green chilli sauce & soy sauce. Mix everything well

    Then add the boiled macaroni & cheese.

    Cook for another one minute until the sauces are mixed wellSprinkle spring onion greens & serve
