mutton paya(trotters) 6 nos
medium size onion, finely chopped 1 nos
chopped ginger 2 tbsp
chopped garlic 1 tbsp
bay leaves 2 nos
whole pepper 1 tsp
cloves 4 nos
black cardamom 2 nos
stick cinnamon 2 nos
Salt or as required 1 tsp
lemon's juice 2 nos
chopped coriander 1 tbsp
crushed pepper if required 1 tsp
Directions
Wash and clean mutton trotters well
Put paya pieces, chopped onion, ginger, garlic, whole garam masala and salt in a pressure cooker.
Add 4-5 cups water and close the cooker lid. Cook it on very slow flame.
It will take more than 1 hour for paya to cook and start leaving the bone.
Adjust the soup's consistency after opening the lid by adding more water as this is a clear soup.
Now remove the pieces and strain the soup, discard the spices. Add back the paya pieces. Simmer for few minutes. Straining the soup is optional.
Add lemon juice and if required add some crushed pepper, adjust the seasoning. Garnish with fresh coriander leaves.
Serve it with pav/bun.
