Ingredients

  • 6 nos mutton paya(trotters)


  • 1 nos medium size onion, finely chopped


  • 2 tbsp chopped ginger


  • 1 tbsp chopped garlic


  • 2 nos bay leaves


  • 1 tsp whole pepper


  • 4 nos cloves


  • 2 nos black cardamom


  • 2 nos stick cinnamon


  • 1 tsp salt or as required


  • 2 nos lemon's juice


  • 1 tbsp chopped coriander


  • 1 tsp crushed pepper if required

Directions

  • Wash and clean mutton trotters well
  • Put paya pieces, chopped onion, ginger, garlic, whole garam masala and salt in a pressure cooker.
  • Add 4-5 cups water and close the cooker lid. Cook it on very slow flame.
  • It will take more than 1 hour for paya to cook and start leaving the bone.
  • Adjust the soup's consistency after opening the lid by adding more water as this is a clear soup.
  • Now remove the pieces and strain the soup, discard the spices. Add back the paya pieces. Simmer for few minutes. Straining the soup is optional.
  • Add lemon juice and if required add some crushed pepper, adjust the seasoning. Garnish with fresh coriander leaves.
  • Serve it with pav/bun.
