Ingredients

Serves : 2
  • For Akki Roti : 1 Cup Rice flour


  • 2 Tsp Green chillies, finely chopped


  • 4 Tbsp Onion, finely chopped


  • 4 Tbsp grated Carrot


  • 2 Tbsp grated Cheese


  • 1 - 2 Tbsp Oil


  • Salt to taste ( Approx 1/4 - 1/2 Tsp )


  • Water as needed ( Approx 1/4 - 1/2 cup )


  • For Pizza : 3 Tbsp Pizza sauce


  • 1/2 cup Corn kernels


  • 10 Cherry tomatoes


  • 1/2 cup Green and Yelloe Capsicum, chopped


  • 10-12 Olives, sliced


  • 1/2 Cup Pizza cheese, grated


  • Few fresh Basil leaves ( approx 6-7 leaves )

Directions

  • In a bowl, take rice flour along with green chillies, onion, carrot, cheese and salt.
  • Add water little by little and knead into a soft dough by adding oil.
  • Divide the dough into two equal sized balls and keep aside.
  • Take one ball, place it on a greased hot tawa and gently press it form a circular roti.
  • Simmer the flame, smear little oil and cook both the sides.
  • Repeat the same for the remaining dough.
  • Now take one cooked Akki roti and spread it with pizza sauce.
  • Arrange corn, cherry tomatoes, sliced olives, capsicum on top of the pizza.
  • Sprinkle grated cheese and garnish with fresh basil leaves.
  • Now place the Akki roti pizza on tawa, summer the flame and close it with a lid.
  • Cook until the cheese starts melting.
  • Once done, remove from the tawa and sprinkle with pizza seasoning while serving.
  • Serve hot.
