Lentil Noodle Soup

  • 1/2 cup boiled chick peas

  • 1/2 cup soaked whole red lentil

  • 1 cup roughly chopped spinach, coriander leaves and mint leaves ( 2:1:1 portion)

  • 2 medium sized onions. 1 chopped and 1 thinly sliced to caramelize

  • 3-4 pods of crushed garlic

  • 2 tablespoon olive oil

  • 1 chopped green chilli

  • 100 gm noodles or spaghetti

  • 2 tablespoon butter

  • 2 glass vegetable stock/water

  • 1 teaspoon Salt 1/2 teaspoon turmeric powder

  • 2 tablespoon Sour cream to top the soup

  • 4 bread pieces of any variety


  • In a saucepan heat olive oil and saute chopped onion.
  • After 2-3 minutes add crushed garlic and saute 1 more minute.
  • Add turmeric powder and chopped green chilli.
  • Add soaked lentil and boiled chick peas.
  • Pour hot water or vegetable stock.
  • Add salt and simmer for about 1/2 an hour to cook lentil completely.
  • In the meantime heat butter in a pan and fry thinly sliced onions to become golden brown and crisp.
  • Drain in a plate and keep aside.
  • In the same pan toast some bread pieces with the leftover onion flavoured butter.
  • When lentil cooks completely, add noodles and the chopped herbs and cook again till everything become soft.
  • Adjust seasoning according to your taste and remove from heat.
  • Serve this very healthy and refreshing flavoured soup with a dalop of sour cream and caramelized onion.
  • Serve also toasted bread as accompaniment.
