Ingredients

Serves : 4
  • 1/2 kg firm fish fillet cut in big cubes


  • 1.5 tbsp pepper - adjust


  • 3/4 teaspoon salt or as per taste


  • 3 cloves garlic finely crushed


  • 2 tbsp palm oil


  • 1.5 tbsp lemon juice


  • 1/2 cup spring onions sliced


  • 1/2 cup red and yellow bell pepper chopped


  • 1 cup tomatoes chopped


  • 1/4 tsp red chilli flakes


  • 1 tbsp sweet paprika


  • 1/3 cup chopped cilantro


  • 1.5 cups thick coconut milk

Directions

  • Marinate fish fillet pieces with garlic lemon juice, salt and pepper for 30 minutes
  • Heat oil over medium heat in large pan
  • Add white part of onion. Cook until soft
  • Add bell pepper, paprika and red chilli flakes with salt and pepper
  • Note in case you don't get sweet paprika use regular paprika. Dont add sugar in this dish
  • Add in tomatoes and green spring onions. Cook for 5 minutes. Add cilantro and mix well
  • Use large spoon , remove half of the veggies from the pan
  • Spread remaining over pan evenly
  • Arrange fish pieces over veggies. Now spread reserved veggies over fish
  • Pour coconut milk over the fish and veggies
  • Bring stew to simmer. Reduce heat. Cover and cook for 15 minutes
  • Adjust seasoning if required
  • Garnish with cilantro. Serve hot with bread or rice
