Ingredients
Serves : 4
1.Small Sized Chicken - 1/2 kg
2.Shallots - 7 nos
3.Mustard seeds - 1 teaspoon
4.Ginger and garlic paste - 1 1/2 teaspoon
5.Curd - 2 tablespoon
6.Turmeric Powder - 1/2 teaspoon
7.Curry Leaves - 2 springs
8.Salt as per taste - 1 to 2 teaspoon
9.Coconut Oil for Frying - 3 to 4 tablespoon
10.Some Coconut pieces for frying - 2 tablespoon
1.Coriander seeds - 1 tablespoon - For making Masala :
2.Cardamom - 10 nos
3.Star Anise - 1 no
4.Cinnamon stick - 1 inch piece
5.Pepper corns - 1/2 teaspoon
6.Cumin seeds - 1/2 teaspoon
7.Bay leaves - 2 nos
8.Fennel seeds - 1/4 teaspoon
9.Dry red chillies - 3 nos
Directions
Heat a pan and roast the above ingredients for 1 to 2 minutes in a low flame and keep it for cooling.
Take mixer jar add the spices along with the chopped shallots and curd and make a paste.
Marinating the Chicken :
Take the chicken in a bowl and add the paste along with the ginger garlic paste and salt as per taste(3/4 teaspoon to 1 tsp).
Mix it well and marinate for 2-3 Hours( overnight marinating will increase the taste).keep it in fridge.
Cooking :
Heat a pan, add 2-3 tablespoon of coconut oil.Add mustard seeds to splutter then add the coconut pieces,curry leaves and 1/2 teaspoon turmeric powder and saute it for 1 minutes in a low flame.Add the marinated Chicken and mix it.Close the lid and cook it in a medium flame.Check the chicken and Stir occasionally.cook till it become dry.(It may take 15 to 20 minutes).Chicken varattiyathu is ready to serve.
