Ingredients

Serves : 5
  • 1.Prawns(cleaned) - 500 gram -For cooking the Prawns:


  • 2.Red chilli powder- 1 teaspoon


  • 3.Turmeric powder - 1/2 teaspoon


  • 4.Salt - 1 teaspoon


  • 5.Water -1/4 to 1/2 cup (Mix everything in a pan and cook in a low to medium flame,till the prawns became cooked.


  • 1.Onion(thin sliced) - 4 nos - For making biriyani masala:


  • 2.Tomatoes(thin pieces)- 2 nos(medium sized).


  • 3.Green chillies - 8 to 10 nos.


  • 4.Garlic cloves - 10 to 12 nos


  • 5.Ginger - 2 inch piece (Grind 3,4 and 5 ingredients in a grinder.)


  • 6.Coriander leaves - 1/4 cup


  • 7.Puthina leaves - 1/4 cup


  • 8.Curry leaves - 1 sling.


  • 9.Biriyani masala orGaram masala - 4-5 teaspoon


  • 10.Oil - 4 teaspoon


  • 11.Cooked prawns - 1/2 kg


  • 12.Salt -1 to 2 teaspoon


  • 13.Water -1/4 to 1/2 cup

Directions

  • Cooking the masala:
  • Heat a pan and add 4 teaspoon oil,than add the sliced onions and saute it.Add 1 teaspoon of salt(It help the onion to cook faster).
  • Mix it for 2-3 minutes in a medium flame till the onion become slightly brown in color.Add the grind ginger,garlic and greenchilli
  • along with the onion and saute it for 2-3 minutes.Add 3 teaspoon garam masala into it and saute it well.Then add tomatoes,curryleaves
  • coriander and puthina(mint) leaves, stir it well.Add some water, stir it then cover and cook for 2- 3 minutes.Open it and add the
  • cooked prawns along with 1 teaspoon garam masala,mix everything together.Add salt and water if required.Cover and cook till the masala
  • become thick.Switch of the flame when it is cooked.
  • For making the rice:(I am using cooker to make the rice)
  • 1.Jeerakasala biriyani rice - 2 cup(Washed and drained).
  • 2.Ghee - 4 teaspoon
  • 3.Oil - 2 teaspoon
  • 4.Boiled water - 3 cup
  • 5.Spices(according to your preference)- cloves 5-6 nos,funnel seeds 1/4 tsp,cinnamon 2 inch piece,cardamom 4-5 nos,bay leaves 2 nos
  • 6.Lemon juice -1 tablespoon
  • 7.Salt -1 1/2 teaspoon (As per your taste)
  • Heat the cooker add 2 teaspoon ghee then add the spices and saute it in a low flame.Add the rice and saute it for 2 minutes.Add 2 teaspoon of ghee
  • and 2 teaspoon of oil into the rice and saute it for 5 minutes in low flame.Add 1 tablespoon lemon juice and mix it with the rice.Add the 3 cups of boiled
  • water into the rice and 1 1/2 teaspoon salt and mix it.When the water starts to boil cover the lid and cook till 1 whistle.Switch off the flame and
  • wait till the vapour goes out completely.(If you open suddently the rice will not cook properly)
  • For making dum Biriyani :
  • 1.The cooked masala
  • 2.The cooked rice
  • 3.Chopped Coriander and puthina leaves
  • 4.Fried onion,cashwes,and raisins
  • 5.Ghee - 1 teaspoon
  • 6.Garam masala-1/2 teaspoon
  • 7.Lemon juice -1 teaspoon
  • 8.Yellow color(Mix 1 tablespoon oil and 1/4 teaspoon turmeric powder.You can get natural yellow color)
  • Take a big pot,add 1 teaspoon ghee and half the portion of rice,some fried onion and chopped leaves.Then add the prawns masala,
  • add sprinkle 1/4 teaspoon of garam masala ,again add rest of the rice ,sprinkle the lemon juice,yellow color,chopped leaves,fried
  • onions,garam masala and slightly press the rice with the spatula.Heat the pot in a very low flame and cover it.Heat it for
  • 5-10 minutes,then off the flame.Let it sit for few minutes before serving.Enjoy the tasty Prawns biryani.
