Gulgule preparation is a must during festival of diwali in Northern parts of India.
The Melt-in-the-mouth sweet pakode or gulgule are made by deep-frying a batter of boiled and sweetened pumpkin, flavoured with cardamom. Whole wheat flour helps to hold the batter together, gur/jaggery adds the sweet content while coconut and fennel seeds intensify the taste and texture of the Gulgule.You will love the rich, traditional flavour and aroma of this sweet.

Ingredients
Serves : 6
1 1/2 cups boiled and mashed ripe pumpkin (kaddu)
1/2 cups jaggery
1 tbsp freshly grated coconut or coconut powder
1 tsp fennel seeds / moti saunf
1/4 tsp cardamom powder(elachi)
1 cups whole wheat flour
2 pinch black pepper powder
1 pinch baking soda
1 tsp chironji or chiroli
1 cups ghee for deep frying
Directions
Mix all dry ingredients in a bowl.
Combine the pumpkin and jaggery in a deep bowl and mix very well with a masher or your hands.
Add this mixture to all the remaining ingredients and mix very well with your hands.
Drop spoonfuls of the mixture into hot ghee in a deep pan and deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides.
