Ingredients

Serves : 5
  • 4 nos big onions thinly sliced


  • 40 ml oil


  • 60 ml desi ghee


  • 750 gms for mutton marination ( aqni) : mutton with bones , large pieces


  • 2.5 cups hung curd


  • 2.5 tbsp ginger garlic paste


  • 2 tbsp raw papaya paste


  • 2 tsp turmeric


  • 5 nos green chilies


  • 1.5 tsp red chilly powder


  • 5 nos cloves


  • 1 nos cinnamon


  • 2 nos nutmeg


  • 13 nos star anise


  • 1 tsp green cardamom crushed to coarse powder


  • 2 tsp salt


  • 1/2 cups mint leaves


  • 1/4 cups cilantros


  • 1 cups finely chopped fried onions( reserve 1/2 cup for layering and garnishing)


  • 1/4 cups oil and ghee used for frying onions


  • 1 nos lemon squeezed


  • 750 gms for cooking rice : long grained basmati rice


  • 2 litre water


  • 2-3 tsp salt


  • 5 nos cloves


  • 1 tsp black whole pepper


  • 1 tsp caraway seeds


  • 4 nos bay leaves


  • 3 nos green cardamom


  • 3 nos cinnamon sticks


  • 2 nos black cardamom


  • 1 tbsp ghee

Directions

  • In A Pan , Heat Oil And Ghee For Frying Onions .
  • Fry The Onions Until Brown . Reserve 1/2 Cup And Use The Rest For Mutton Marination .
  • In A Wide Container , Take Mutton . Add All The Ingredients Listed Under Marination Section One By One .
  • Raw Papaya Paste Is Used As Meat Tenderizer And Using It Is Mandatory . Mix All Together Well For A Couple Of Minutes .
  • Marinate The Mutton For Minimum 2 Hours . Needn’t Refrigerate .
  • Coming To Basmati Rice , Wash And Soak The Rice For 40 Minutes .
  • After 2 Hours Of Mutton Marination , Heat A Wide Wok / Saucepan . Add 2 Liters Water , Salt And Other Ingredients Listed Under Cooking Rice Part .
  • Bring The Water To Boil . Add The Completely Drained Basmati Rice To The Boiling Water .
  • Simmer The Flame And Half Cook The Rice .
  • Drain The Water Completely And Cool The Half Cooked Rice In Another Wide Container .
  • Now It’s Time To Set All The Ingredients In One Pot For Dum Cooking .
  • Take A Biryani Wide Container . First Add The Marinated Mutton Along With The Marinade As The First Layer .
  • Spread Throughout The Container . Now Add The Half Cooked Basmati Rice . Spread Gently On The Mutton Layer .
  • Now Add The Mint Leaves , Chopped Cilantros , Fried Onions , Saffron Infused Milk , Ghee On Top . Seal The Container Completely With An Aluminum Foil .
  • Place A Heavy Lid On Top . Cook In Low To Medium For 25 Minutes .
  • Keep Turning The Container Occasionally On The Stove For Even Cooking .
  • After 25 Minutes , Unseal The Container . Bring The Layers From Down To Up With A Light Spatula . Toss Gently .
  • Kacchi Aqni Mutton Dum Biryani Is Ready To Serve . Serve Hot With Burani Raita And Onion Raita. Enjoy !
