2 cups rice flour
Salt 1/2 teaspoon
2 1/2 cup boiling water
Take a heavy bottomed pan and dry roast rice flour for about 6-8 minutes in medium heat.
Don't over roast . Roast until a roasting flavor emits from the rice.
Transfer in a mixing bowl.
Boil 3 cups water.
Mix salt with the roasted flour
Now add boiling water in the flour gradually and mix with a spatula.
Mix enough boiling water to form medium soft dough
Knead the dough with hand to make it smooth.
Cover and keep the dough for 15 minutes.
After resting take a big lime size portion of the dough.
With the help of your palm make a diamond shape as shown in the picture. This is the traditional shape of this mera pitha.
Like this make all the pithas.
Put sufficient water in a steamer to boil.
Transfer the pithas to the steamer container.
Steam them for about 20 minutes or till they become completely firm in shape.
Take out from steamed and rinse them in cold water.
Mera pitha are done now.
Serve them with any kind of gravy dish or even with rabdi or cream
