Ingredients

Serves : 4
  • A) for grinding


  • 2 cups fresh tender jowar (ponk)


  • 1 finely chopped green chilli


  • 3-4 finely chopped garlic cloves


  • 1 inch finely chopped ginger


  • 2 tbsp chopped coriander leaves


  • 1 tsp cumin seeds


  • 1 tsp coriander seeds


  • B) other ingredients


  • 1/3 cup chopped onion


  • 1/2 cup gram flour


  • 1 pinch turmeric powder


  • 1 pinch red chilli powder


  • salt as require


  • Oil for deep frying

Directions

  • Rinse fresh tender Jowar in water a couple of times in Pan.
  • Drain all the water.
  • Then add the ponk in a grinder jar.
  • Also add green chilli, garlic, ginger and coriander leaves.
  • Add cumin seeds and coriander seeds.
  • Green to a semi fine paste.
  • Do not add any water while grinding.
  • Now take the ponk paste in a mixing bowl.
  • Add onions.
  • Also add gram flour.
  • After that add Pinch of turmeric powder, pinch of red chilli powder and white sesame seeds.
  • Also add salt to taste.
  • Mix all the ingredients well.
  • Heat some oil in Pan for deep frying.
  • Now take a small to medium sized portion of the mixture and flatten it into a vada shape.
  • Gently place or slide the vada in the hot oil.
  • Flame should be medium.
  • Try it until golden brown.
  • Now remove the fry vadas in one plate.
  • Place vadas on kitchen paper towels for extra oil to be absorbed.
  • Serve ponk Vada hot with coriander Mint Chutney.
