Ingredients

Serves : 6
  • Mutton chap 1/2 kg


  • Curd 250 gm


  • Rice 6 cup


  • Raw papaya paste 2 tablespoon


  • Onion slice 4


  • Red chilli powder 1 teaspoon


  • Turmeric powder 1/2 teaspoon


  • Salt 1 teaspoon


  • Ginger garlic paste 1 tablespoon


  • Garam masala powder 2 teaspoon


  • Mint leaves 1/3 cup


  • Green cardamom 4


  • Cinnamon sticks 2


  • Bay leaves 5


  • Black pepper 7-8


  • Cloves 4


  • Cumin seeds 1/2 teaspoon


  • Lemon juice 1 tablespoon


  • Saffron 4-5 strands


  • Oil 250 gm


  • Milk 1/3 cup

Directions

  • Wash and soaked rice
  • Place the mutton pieces in a deep bowl, add the papaya paste and mix well so that all the mutton pieces are covered with the paste.
  • Keep in a refrigerator for 2-3 hours so mutton become tender
  • Heat oil in a wok add slice onion and saute till golden brown color now remove it from a wok and keep a side
  • Take the mutton out from the refrigerator add curd, salt, turmeric powder, red chilli powder, ginger garlic paste, half the fried onions, half the fresh mint, and garam masala powder and mix well.
  • Cover the bowl and keep a side
  • Cook rice in plenty of water along with salt till half done now drain remaining water now add green cardamoms, cinnamon, cloves, black pepper and cumin seeds over the rice and mix well.
  • Now take a deep pan add half mutton in it now top with rice then again remaining mutton topped with rice now put remaining fried onion, mint leaves
  • Now dipped saffron in a milk and pour it on a biryani
  • Cover the pot with a lid place a heavy object on a lid and cooked till rice become soft
  • Serve hot
