Sieve maida, salt, baking soda. Add semolina and sugar.
Add curd and mix well.
Note:- use sour curd for tangy flavour in bhaturas. 😋
Add water little by little and knead to a smooth and soft dough.
Cover the dough with wet kitchen towel and keep aside for 2 hours.
Heat oil on high heat in a kadai for deep frying bhaturas.
Make medium sized balls from the dough. Apply oil while rolling and roll like pooris. Feel free to give them desired shapes.
Drop the bhaturas in hot oil and it will start puffing within a minute.
When the sizzling of the oil stops turn the bhatura and fry the other side.
When light golden, remove the bhatura and drain on paper towels to remove excess oil.
Bhaturas are ready. Serve immediately with chhole curry.
