MANGO CHUTNEY WITH WHOLE SPICES

Ingredients

Serves 6

  • Raw mango - peeled & roughly chopped 2 nos

  • Coriander seeds 2 tbsp

  • Cumin seeds 1 tsp

  • Fennel seeds 1 tsp

  • Fenugreek 1/2 tsp

  • Garlic cloves 8 nos

  • Red chillies 4 nos

  • Mustard oil 1/4 cups

Directions

    Heat oil in a heavy bottom pan on medium heat then reduce heat to low.

    Add chillies, garlic, coriander, cumin, fennel and fenugreek seeds one by one and fry till aroma comes out. Take out from pan and cool down naturally.

    Put all seeds except garlic cloves in chutney jar and make fine powder.

    Now add garlic cloves, mango pieces, salt, 2 tbsp water and grind again till it becomes smooth paste.

    Now take out little quantity of chutney and taste it. Adjust salt according to your preference and grind again for few seconds.

    Take out in a bottle. Now add rest of oil in chutney and mix well.
