For rajagiri poori:-combine rajagiri atta, salt, red chilli powder. Add water little by little and make a stiff dough.
Cover it and let it rest for 15 minutes.
Meanwhile cut potato, tomato and green chilli. Wash and soak samak for 10 minutes. keep aside.
Divide the dough into small balls and roll into thin chapatis. Heat the tava and cook the pooris one by one by drizzling oil as needed for frying them. Transfer them to a plate.Note:- If you want you can deep fry the pooris.
Heat oil in a pressure cooker. Add cumin seeds allow them to splutter.
Add potato, tomato, green chilli in it and saute for 2-3 minutes.
Once done add turmeric powder, red chilli powder, salt, garam masala and mix well. cook for 1 minutes.
Once done add soaked samak and fry for 2 minutes. stir to occasionally.
Add water. Cover it and pressure cook it for 2 whistles. Open it and add chopped coriander leaves and lemon juice. Mix well.
Rajagiri pooris and samak is ready. Serve hot with aloo ki sabji and curd. These are perfect for upvas. Enjoy 😊
