Boil 5 cups water. Add spinach and boil for 2 minutes
Drain excess water and transfer immediately to ice cold water
Once spinach has cooled, drain excess water
Blend spinach, ginger, garlic, green chillies to smooth paste
Heat oil and butter in a pan
Add paneer and roast until golden brown over edges. Keep it aside
Add bay leaf, cumin seeds, cardamom, cinnamon and 1 teaspoon kasuri methi in same pan
Roast until aromatic
Add onions and saute until translucent
Add tomatoes and saute until mushy
Add paneer paste, salt and water. Mix well
Add paneer and mix
Simmer and cook for 5 minutes
Add garam masala, kasuri methi, cream and mix well
Serve hot with roti or naan
