Grease oil on brinjal and roast it from all sides and let it cool for sometime and remove purple part.
In a bowl take peeled brinjal and mash it.
Now add red chilly powder, turmeric powder, coriander powder, garam masala, salt, sugar and mix well.
In a tadka pan add oil, mustard seeds, hing, onions, garlic and pour it in brinjal mixture.
Mix well and serve with paratha, roti or bhakri.
