  • Baingan ka bharta : Ingredients : Roasted baingan - 1/2 kg Onion - 1 big chopped Tomato - 2 medium Ginger -1 tsp Green chillies - 1 tsp chopped Mustard oil - 1 tbsp Hing - 1/2 tsp Salt to taste Haldi - 1/2 tsp Lal mirchi powder - 1 tsp Dhania powder - 1 tsp Garam masala - 1/2 tsp Coriander leaves to garnish.

    Heat oil till smoking point. Put hing add onions. Saute till translucent. Add tomato paste. Add all dry spices. Cook well. Add roasted baingan. Cover n cook till oil separates. Serve hot with bajra roti / tandoori roti.
