Ingredients

Serves : 4
  • For Brinjal Bharta- Big white Brinjals 2


  • Big green chillies 6 and 2


  • Small green chillies 5


  • Garlic cloves 8


  • Coriander leaves 1/4 cup ( chopped)


  • Spring onion 1 cup (chopped)


  • Coriander seeds 1/2 tsp (crushed)


  • Ajwain seeds 1/2 tsp


  • Cumin seeds 1/2 tsp


  • Cround nuts 1 Tbsp (crushed)


  • Oil 2 Tbsp


  • Salt 2 tsp


  • For Bajra Bhakri- Bajra(pearl millet)flour 1 cup


  • Salt 1/4tsp


  • Warm water 1/4 cup

Directions

  • Roast brinjal on a flame until it cooks well from all sides.
  • Slit two big green chillies from the center and apply salt on it.
  • Roast remaining (4)big green chillies,and small green chillies on tava.
  • Peel the skin of roasted brinjal,mash it and keep aside.
  • Coarsley grind roasted green chillies,garlic and coriander leaves.
  • In a pan heat oil.
  • Add coriander seeds,ajwain seeds and cumin seeds.
  • Add crushed ground nuts.
  • Add slitted big green chillies.
  • Add spring onion.
  • Add mashed brinjals.
  • Add salt and cook for 5 minutes.
  • For Bajra Bhakri,add warm water and salt in a flour keep it for 5 minutes.
  • Heat the tava.
  • Make the soft dough of flour and knead it well.
  • Make equal size ball of dough.
  • Sprinkle some flour in a plate,take one ball and make flat thick round circle of it with the palm.
  • Flip it and place on a hot tawa.
  • Sprinkle some water on flour side of bhakri (round circle)
  • Cook it for 1/2 minute on high flame.
  • Turn it over and again cook it for another 1/2 minute on high flame.
