Grate the coconut and roast it in a pan by adding sugar and cardamom till it becomes slight brownish red.
Keep the coconut stuffing aside.
In the same pan put water.
Add ghee ,sugar and salt to it.
When it starts boiling add semolina to it by continuous stirring to it in low flame. Then the dough is ready and keep aside.
After slightly cooling down knead it gently by greasing your hand with oil.
Then make small balls to it.
Make a bowl shape of each ball and add the stuffing to it and close it.
Follow this process for rest of the balls.
Then dip fry in oil till golden brown.
Manda pithas are now ready . You can serve hot the pithas or keep it in an airtight container for 2days.
