Ingredients

Serves : 4
  • 3 cup all-purpose flour


  • 1 cup ghee (solidified)


  • 1/2 cup milk( cold)


  • 4-5 Ice cubes


  • 4 cup water


  • 1/4 teaspoon yellow food colour


  • 1 tablespoon almonds & pistachios chopped


  • Ghee for frying


  • Ingredients for sugar syrup-


  • 1 1/2 cup Sugar


  • 1 Cup water

Directions

  • First make sugar syrup-
  • In a pan add sugar and water on medium heat, and mix till sugar dissolves.
  • After 5-6 minutes the syrup will develop a one string consistency,for checking you have to put a drop of the syrup between your thumb and index finger and move the fingers apart, you will notice the syrup forming one string/thread. 
  • Keep aside.
  • Method of making ghevar-
  • Take ghee in a big bowl ,than take one ice cube and rub the ghee vigorously.
  • Again repeat the same process by taking one ice cube at a time and rubbing ghee till it becomes very white.
  • Now add the 1-2 tablespoon of milk,1 cup of flour and 1 cup of water.
  • Beat it using a hand mixer, and beat till it becomes smooth batter.
  • Again add 1-2 tablespoon of milk,1 cup of flour and 1 cup of water and beat well.
  • Repeat the same process and finally add yellow food colour and beat well.
  • Add more water if required, batter should be fairly thin ,it should run off easily when poured from a spoon.
  • Now heat ghee in a deep pan.
  • Once the ghee is super hot, pour batter from a height of at least 6-7 inches using a ladle.
  • Pour batter little by little in a constant flow into center of the pan The batter will sizzle up and spread immediately.
  • Wait for a minute and then pour another ladle in the center of the pan wait few seconds and then using a elongated utensil, remove some batter from the center so what you get a hole in the center to lift the ghevar once it's done.
  • Pour 2 more ladles of batter, repeating the same step again of making hole in middle.
  • Let it fry until it turns light brown in colour.
  • Once the ghevar has turned to brown in colour, means it is cooked now.
  • Take out ghewar with an iron skewer inserted in hole. Lift carefully, at a slant, and place on wire mesh to drain. 
  • Now place it on serving plate and drizzle evenly with warm sugar syrup or you can dip ghevar in the sugar syrup too it's up to you.
  • Sprinkle some chopped dry fruit on it and enjoy.
