Ingredients

Serves : 2
  • Whole wheat flour 2-3 cups


  • Semolina 1/2 cup


  • Ghee / clarified butter 2 cups


  • Salt 2 teaspoons


  • Sugar 1 teaspoon


  • Ajwain 1 teaspoon


  • Mung dal 1 cup


  • Oil 1 tablespoon


  • Mustard Seeds 1 teaspoon


  • Jeera 1 teaspoon


  • Cloves 4


  • Black pepper corns 1 teaspoon


  • Turmeric powder 1/2 teaspoon


  • Red chilly powder 1 teaspoon


  • Coriander powder 1 teaspoon


  • Finely chopped tomatoes 1 cup


  • Crushed garlic 2 teaspoons


  • Chopped coriander leaves for garnishing 1-2 tablespoons


  • Curry leaves 8-10

Directions

  • In a mixing bowl take whole Wheat flour , semolina ,ajwain, 4 tablespoons of ghee and salt to taste. Mix well everything.
  • Add little water and knead a tight dough , keep it covered for rest for next 15-20 minutes
  • Later , prepare tennis balls size balls out of ready dough and press gently in the centre
  • Keep baati maker for prepheat for some time
  • Place all the ready pressed balls in to baati maker
  • And cook on very low heat for next 15-20 minutes , keep turning baties in between
  • Roast properly from all sides till golden brown in colour
  • Baaties are ready , pour some more ghee on top and ready ro serve
  • For dal , wash green mung dal in clear water and soak in sufficient water for approximately 10-15 minutes
  • Later add some salt to taste amd turmeric powder in soaked mung dal
  • Add some more water and cook it till soft . Else cook in cooker for 2-3 whistles.
  • Heat 1-2 tablespoons of oil in a heavy bottom pan and mustard seeds, jeera and curry leaves
  • Let them Splutter , and add cloves , black pepper corns, turmeric powder, red chilli powder and coriander powder
  • Mix tadka, well for a while and add finely chopped tomatoes , saute'till oil separates
  • Now add cooked dal, Adjust salt according to taste , and some water to adjust consistency
  • Mix well everything and give it a proper boil , lastly add chopped coriander and dal is ready to serve with baati
  • For serving , dip baaties in ghee, add some ghee to dal and serve hot immediately with some green chutney and salad
  • Enjoy endlessly with family friends this traditional Rajasthani / Marwadi authentic dish ... It's just awesomely tasty tempting and filling .
