Peel and wash the vegetables( 1 to 6)and cut into 2 inch pieces
Grind grated coconut ,cumin powder,small onion ,and green chilli coarsely.
Put the Tamarind in 1/4 cup water and squeeze to get a thick pulp
Add all the cut vegetables In a thick bottomed vessel and pour l tbs of coconut oil and mix the vegetables.
Swich on the stove and cook the vegetables by adding Red chilli powder, turmeric powder, salt ,and 1/2 glass water.(Do not over cook)
When it is just cooked add tamarind pulp and mix.Thenadd coarsely ground coconut and mix.Swich of the stove .
Last step is the addition of 2tbs of coconut oil and curry leaves which give our Avial super smell and taste. After adding this special ingredients Avial is ready to serve.
