For luchi : In a bowl take maida, and oil and salt make tight dough with water.
Now cover it with plate and leave it for 30 minutes.
Now make small balls and make puris.
Now deep fry them in hot oil.
For Aalur torkari : wash and peel off potatoes and cut into cubes.
Now heat a pan, add Mustard oil, add kalonji, red chilli then add potatoes and fry until it turns little golden colour.
Now add salt, Turmeric pd and fry 2 minutes more. Then add sliced tomatoes.
Now add required water then cover it and check after 15 minutes.
If potatoes were boiled well then turn off the gas flame.
Serve hot.
