First in a bowl take maida, wheat flour, salt, water, ajwain, cumin, black pepper powder, salt and make dough of it.
Now make small balls of it and roll in shape of puri.
Deep fry those pakwans in oil and keep aside.
Rinse chana dal and pressure cook upto 3 whistles.
Heat ghee in cooker and add cumin, green chillies, hing, curry leaves, dal (roughly mashed), salt, red chilly powder, turmeric powder, coriander powder, sugar, garam masala, water, and pressure cook upto 1 whistle.
Now take pakwan then put dal add onions, green chutney, tamrind chutney and garnish with sev.
