Ingredients

Serves : 2
  • Aubergine /Bharit brinjal 1 big


  • Onion chopped 2


  • Tomato chopped 1


  • Garlic cloves 5 to 6


  • Green chillies 1


  • Oil 2 tbsp


  • Musterd seeds 1/2 tsp


  • Cumin seeds 1 tsp


  • Asafotida 1/4 tsp


  • Red chilli powder 1 tbsp


  • Coriender pawder 1 tsp


  • Cumin seeds pawder 1 tsp


  • Coriander leaves chopped 1 tbsp


  • Salt 1 tsp


  • Rice bhakri 4 to 5


  • Fresh chilli spread / thecha2 tbsp


  • Peanuts chutney 1 tbsp


  • Carrots jullien cuts 1/3 cup


  • Cabbage jullien cuts 1/3 cup


  • Capsicum jullien cuts 1/3 cup


  • Spring onion jullien cuts 1/3 cup


  • Spring onion strips 4


  • Rice bhakri


  • Rice flour 1 cup


  • Water 1 cup


  • Salt 1/4 tsp

Directions

  • Aubergine Bharit
  • Rinse aubergine first
  • Make cut in cross shape put garlic clove inside brush the cooking oil
  • Aubergine on top of flame roast till the skin gets completely charred and the aubergine shrinks in bit in size
  • Roast aubergine on the flame so its gets cooked evenly and from all sides
  • Aubergine should be completely cooked from within
  • Remove roasted aubergine in plate let it cool
  • Peel the charred skin and discard it
  • Chop the aubergine keep aside
  • Heat oil in kadai add in mustard and cumin seeds let splutter it
  • Add finely chopped Onion and saute till translucent
  • Now add finely chopped tomato and saute till tomatoes become soft and and the oil starts to leave side of the mixture
  • Add salt to taste , termuric powder, coriander cumin seeds powder , red chilli powder, mix well saute for 1 minute
  • Add the chopped and mashed aubergine saute for 3 to 4 minutes on a low flame
  • Add finely chopped coriander leaves and stir well
  • Switch off the flame
  • Rice bhakri
  • Take 1 cup of rice flour and 1 cup of water
  • Boil water in vessel keep gas in medium flame add pinch of salt
  • Once water starts bubbling reduce flame add in flour and mix with spoon
  • It will appear like crumbs
  • Switch off flame
  • Now start kneading the mixture with hands
  • Dough becomes nice smooth
  • Take 2 inch dough round ball
  • Dust few flour on bakk roll them with a roller into round shape
  • Take pan keep on flame
  • Fry the bhakris from both side one side put few water
  • Then flip the bhakri and roast both side
  • Now place bhakri on fire with the help of tongs roast them from both sides
  • Frankie rollstake bhakri and roast on pan with better from both sides
  • on bhakri put some fresh red chilli thecha and sprinkle few peanuts dry chutney
  • Now arrange jullien cuts vegetables
  • Take aubergine bharit keep on vegetables
  • Now fold the bhakri same like frankie rolls
  • On top knot with spring onion strips
  • Ready to serve and eat
