1.In a mixing bowl mix all the ingredients for masala,coconut garlic crushed peanuts green chilli ginger paste corriander garam masala pwd turmeric red chilli pwd dhaniya jeera pwd 1 tsp salt sugar n 1 tsp oil n mix properly
2. Chop papadi in small pieces
3. Cut potatoes brinjal yam suran n banana in to big pieces.
4. Heat 5 tbsp oil in a big fry pan.
5. Add carrom seeds stir n add hing n papadi tuver dana n stir
6. Add 1/2 tsp salt stir fry add 1/4 th of the masala n stir for few seconds
7. Add all the vegetables 1/2 tsp salt n mix stir for 1 minute
8. Add remaining masala n stir for 1 minute.
9. Add 1 cup water n cover the pan n cook on medium flame for 5 minutes
10. Add 1 cup water n cover the lid n cook on slow flame for 10 minutes.
11. Check the vegetables ,if it is not cooked then cook for some more time.
12. Consistency should be with very little liquidy.
13. Serve Undhiyu garnished with chopped corriander.
