firstly, roast 1 cup vermicelli in 1 tbsp oil till it turns golden brown. Once done keep it aside.
Note= If you are using roasted vermicelli them you can skip this step.
To the same pan add remaining oil. Add mustard seeds and cumin seeds. let them splutter.
Add onion and saute slightly. Add tomato and green chilli. Saute them for 1 minute.
Note= Add vegetables of your choice to make upma more nutritious.
Add turmeric powder, red chilli powder and salt. Mix it.
Add roasted vermicelli and garam masala to the pan mix it and let it fry for 1 minute. Once done Add required water. stir well. cover it and let it cook for 3-4 minutes or until water evaporates.
Note= Cook the semiya till they are just soft. overcooking vermicelli turns them mushy.
Switch off the flame add lemon juice and finely chopped coriander leaves (optional).
