Gajar or Carrot halwa is a traditional Maharashtrian sweet delicacy and is been prepared and served in marriages, religious functions or as a dessert.

Ingredients
Serves : 4
Carrot - 400gms
Milk – 1/2 liter
Sugar - 4 tablespoon or half cup (depending on the sweetness you require)
Ghee - 2tbsp
Almonds - 10-12 nos – blanched and sliced.
Raisins - 10-12 nos – roughly chopped
Nutmeg powder - 1/2 teaspoon
Cardamom powder - 1 1/2 teaspoon
Mava – 125gms
Kesar Strands – 8-9
Directions
Wash, peel and grate the carrots.
Take pan. Add ghee and add grated carrots into it. Stir well in ghee.
Add warm milk and bring the whole carrot and milk mixture boil on a low or medium flame. Use a heavy-based non-reactive pan or a non-stick pan to make the halwa.
Simmer and let the mixture cook further.
Once the mixture half cooked, after approx. 12-15 mints, add cardamom and nutmeg powder. Stir and add sugar, crushed or sliced almonds, chopped raisins, pistachios. Stir well.
Add Mava and kesar. Keep stirring. Stir and cook further for 2-3 mints till moisture dries up.
