Ingredients

Serves : 4
  • Grated bottle gourd or lauki (lau)- 1 medium bowl


  • Rohu Fish Head - 1 whole


  • Ginger-Garlic paste - 2 tablespoon


  • Tomato (chopped)- 1/2cup


  • Turmeric powder - 2teaspoon


  • Cumin seed powder - 2teaspoon


  • Coriander Powder - 2teaspoon


  • Green chilli paste- 1teaspoon


  • Salt- 2teaspoon/ as per taste


  • Sugar- 2teaspoon


  • Coriander leaves ( chopped ) - 1/2 cup


  • Bengali Five Spice / paanch foron- 1 teaspoon


  • Mustard oil - 100 ml


  • Bayleaf - 2


  • Whole red chilli - 2

Directions

  • Clean the rohu fish head.. marinate with salt and turmeric powder for 5-7 minutes.. add half of the mustard oil, then fry it properly..
  • Into the same pan, add rest of mustard oil, after smoke comes add paanch foron / bengali five spice, whole red chilli and whole bayleaf
  • Fry them for a minute.
  • Add ginger-garlic paste.. fry them until raw aromas are fully gone..
  • Add grated bottle gourd/lauki/lau.. mix them
  • Cover the pan.. fry them for 2-4 minutes on a medium flame..
  • Never add salt at first to lauki, as it's removes to much of water.. for this reason masalas can't go into the lauki.. and lauki becomes tasteless
  • After 4 minutes, add tomatoes, turmeric powder, green chilli paste, cumin powder, coriander powder
  • Mix them well and add fried rohu fish head
  • With the help of a spatula crack the rohu fish head.. so that flavours comes out..
  • Cover it again and cook it on a low flame until lauki are fully done
  • Lastly, add salt and sugar as per taste and spread coriander leaves..
  • Mix them all together..
