Ingredients

Serves : 3
  • 250 gms ridge guard (turiya) cut into cubes


  • 3 nos patra leaves


  • 3/4 cup besan


  • 1 tsp +1 tsp corriander cumin pwd


  • 1 tsp Red chilli pwd


  • 1/2 tsp garam masala pwd


  • 2 tbsp sweet tamarind chutney


  • 1/4 tsp soda bi carb


  • 2 1/2 tbsp oil


  • 1/2 tsp cumin seeds


  • 1/4 tsp asafoetida


  • 1/4 tsp turmeric pwd


  • 1 tbsp green chilli ginger garlic paste


  • 1/2 cup water


  • 1/2 tbsp lemon juice


  • 2 tbsp chopped corriander


  • 2 tbsp grated fresh coconut

Directions

  • 1.Take besan in a mixing bowl
  • 2.Add 1tsp corriander pwd, 1/2 tsp red chilli pwd, 1/4 tsp garam masala pwd, tamarind chutney 3/4 tsp salt,1/2 tbsp oil,n soda n mix
  • 3. Use water n make medium thick paste
  • 4. Take patra leaves n remove all veins
  • 5..Apply besan mixture over it n place another leaf on it
  • 6..Again spread the mixture n fold the leaves with applying mixture n make a roll
  • 7..Steam the roll in steamer for 10 mnts
  • 8..Cool the roll n cut in to small pieces
  • 9..Heat remaining oil in a pan n add cumin seeds
  • 10.When it crackles add hing n ginger garlic chilli paste n stir for few seconds
  • 11.Add turiya pieces salt n turmeric pwd n mix
  • 12.Cover the lid n cook till soft
  • 13.Then add 1/2 cup water sugar n add patra pieces and mix
  • 14.Cover the lid n cook for 1 minute n sitch off the gas
  • 15.Add lemon juice n serve in a plate
