Ingredients
Serves 4
Malabar spinach- 1bunch
Cubed pumpkin- 2cups
Potoato- 2medium
Prawn- 300gms
Oil- 2tbsp 1tsp
Sugar- 1tsp
Onion- 1medium 1small
Ginger- 1inch
Garlic- 4 to 5cloves
Tomato- 1medium
Haldi- 1/2tsp 1/4tsp
Red chili powder- 1/2tsp 1/4tsp
Salt- 1/2tsp 1/4tsp
Cumin powder- 1/2tsp
Coriander powder- 1/2tsp
Garam masala- 1tsp
Directions
Soak, clean and chop malabar spinach and keep aside
Cut potatoes in small cubes
Clean and marinate prawn
In a pan heat 1tsp oil and fry the marinated prawn and keep aside
In a blender jar add 1small onion, ginger and garlic and make a smooth paste
Clean and chop onion and tomato
Heat oil in a kadai, then add sugar and let it caramalise it
Then add chopped onion and saute up to golden
Now add the paste and saute up to raw smell goes
At this stage add chopped tomatoes and dry spiced excpt garam masala. cook everything properly up to oil separates
Now add cut pumpkin and potatoes and saute up to little soft
Add chopped malabar spinach and fried prawn
Now cook everything up to soft
Finally add garam masala and mix
It is best to be eaten with rice
