Ingredients

Serves : 4
  • 1/2 cup sabudana (tapioca or pearl seeds)


  • 3-4 tbsp sugar


  • 4-5 saffron strands (dissolved in 1 tbsp warm milk)


  • 1/4 tsp cardamom powder


  • 1/2 cup water


  • 2-3 tbsp roasted and chopped dry fruits


  • 4 cups milk

Directions

  • Wash sabudana and drain them.
  • Soak them in water for 2 hours. They will absorb almost all water and their size will increase.
  • In a heavy bottomed pan heat milk over medium flame. When milk comes to boil add soaked sabudana.
  • Add sugar and stir well until it dissolves completely.
  • Cook them for 15 minutes or until they turn transparent and soft. Make sure to stir continuously.
  • Add Chopped dry fruits, cardamom powder and saffron milk. give it a nice stir.
  • Stir continuously and cook until milk turns thick. It will take approx 5-7 minutes.
  • Transfer kheer in a bowl garnish with some dry fruits and saffron strands. Serve it the way you like it- hot or chilled. Enjoy ☺
  • Note📋= When kheer cools down it will become thick. If you want to serve it chilled, then add 1/2 cup milk and mix well before serving.
