Tender mutton with bones 450 grams

In a heavy based pot , heat oil . Add cinnamon sticks , cloves , cardamom pods , black pepper corns . Fry for few seconds . Add the chopped onions . Sauté till translucent . Add mutton . Sauté the mutton pieces in the oil for 3 minutes till the mutton changes colour . Add ginger garlic paste , green chilli paste . Sauté for a minute . Now add 1/4 glass water and cover the pot .
I placed a wok full of water on top of the mutton pot . A kind of dum cooking . In this traditional method , mutton gets evenly cooked tenderly . This method is time consuming compared to pressure cooker method . But anything is okay for achieving the desired taste and texture is my opinion . The juices get released from mutton . Cook mutton under medium flame .
Once the mutton is cooked tenderly , add beaten yogurt . Mix and cook for another 3 minutes . Add roasted cashew paste . Add coconut paste . Mix and cook . Add Garam Masala . Add crushed cumin powder . Add crushed garlic . Add water to dilute tue mixture to soup consistency . Add salt . Add milk .
