Wash the poha for 2-3 times and drain the water and keep aside for 10 minutes. Add some sugar to add a little sweetness in poha.
Heat oil in a pan. Add mustard seeds and when the mustard seeds crackle add curry leaves and asafetida, and add peanuts.
When peanuts roast, and then add chopped onion and green chilli.
When onion is cooked, add the chopped boil potatoes (if you use raw potatoes, then add potatoes with onion).
Now add poha,salt and turmeric powder.
Saute nicely.
Mix it well and add fennel seeds.
Remove from the heat and garnish with coriander.
Sprinkle sev mixture and lemon juice on top.
Serve hot with tea/ jalebi/ papad
You can add veggies like boiled peas, chopped tomatoes, and chopped carrots.
Also garnish with grated coconut as it enhances flavour.
