Sweet Folded Mathri


Mathri is a traditional Rajasthani, North Indian snack, prepared using Maida or wheat flour, ghee, water, cumin seeds, methi, carom seeds etc. It can be prepared in advance and stored in an airtight container. It stays good for 20-25 days. These crackers are prepared mostly during Diwali or karwa Chauth. In this recipe, I have prepared a sweet version of Mathri, folded them and deep fried on a low flame. Frying needs to be done on a low flame due to its thick texture. The recipe is quite similar to Maharashtrian snack “Shankarpali.” This flaky, crispy, sweet mathri tastes awesome and goes well with tea or can be eaten as it.

  • Maida or Flour – 3cups

  • fine Semolina – 1/4th cup

  • Ghee - 3/4th cup

  • Warm milk - 1/2 - 3/4th cup

  • sugar - 1/2 cup

  • Salt - 1/4 teaspoon or 1 pinch of

  • Oil or ghee - 3 cups for frying


  • In a large bowl mix Maida, semolina, salt.
  • In a saucepan or pan heat milk, add sugar and ghee. Let it boil and sugar dissolves properly.
  • Make well in the center of the flour. Pour milk, ghee and sugar mixture. Mix well with the help of a spatula.
  • Let mixture cool slightly. Using hands start kneading a stiff dough. Add warm milk if required. Cover and keep aside for 30 minutes.
  • Divide dough into 4-5 dough balls. Keep aside.
  • Take one dough ball on rolling board and roll it into a thick 7-8 inch-diameter circle. Prick it with the help of Fork. Flour or oil is not needed for rolling.
  • Using 3-4-inch cutter cut it into 4-5 circles. Fold each circle in the center, refold it making a triangle shape. Press folded edges slightly. Prepare all the mathris and keep ready for frying.
  • Heat oil in a wok or kadhai. Drop 2-3 mathris in oil and fry them on low- medium flame until golden brown and crisp. Do not fry them on a high flame else they will not cook properly.
  • Remove it on an absorbent paper. Once cooled store it in the airtight container or serve with hot tea.
