Description

Phirni is delicious punjabi dessert made with milk and grind rice, which is traditionally served in clay bowls. It is similar as rice kheer. Saffron gives it a nice flavour.

Ingredients

Serves : 4
  • 1 litre milk


  • 1/2 cups rice


  • 1/2 cups sugar


  • 10-12 nos saffron threads


  • 18-20 nos finely chopped almonds


  • 3-4 nos green cardamom crushed & powdered

Directions

  • Rinse the rice and soak them for 30 min.
  • Drain the water & grind them till the consistency granulated not in fine paste.
  • Soak saffron in to a half cup warm milk. Keep aside.
  • Heat milk heavy bottom deep pan.
  • Let the milk come to boil then add ground rice in it.
  • Cook ground rice in milk on slow flame.
  • Keep starring so that lumps not formed.
  • Take some boiling water add some almonds in it. Blanch, peel & sliced them.
  • When the rice is almost cooked , add saffron milk, sugar & cardamom powder in it. Stir well.
  • When it becomes thick add into serving bowls.
  • Let it cool down on room temperature.
  • Garnish with chopped almonds & keep in fridge for 2 hours.
  • Serve chilled.
