Ingredients

Serves : 5
  • Mutton- 500 grams


  • Onions- 5-6 chopped


  • Tomato- 1-2 chopped


  • Ginger garlic and green chili paste- 1 tablespoon


  • Bay leaf- 1


  • Cinnamon sticks- 2


  • Black peppercorns- 7-8


  • Cloves- 2


  • Black cardamom- 2


  • Green cardamom- 3


  • Red chilli powder- 1 and 1/2 teaspoon


  • Turmeric powder- 1/2 teaspoon


  • Coriander powder- 1 teaspoon


  • Salt - 1 teaspoon or as needed


  • Garam masala- 2 teaspoon


  • Oil- 3 tablespoon


  • Ghee- 1 tablespoon


  • Coriander leaves for garnish - 2 tablespoon


  • Water - 2 cup or as required

Directions

  • Heat oil and ghee in a pressure cooker; add bay leaf, cinnamon stick, black cardamom pods, green cardamom pods, cloves, and black peppercorns, and sauté for a minute.
  • Now, add ginger garlic and green chilli paste and again sauté for minute.
  • Then, add chopped onions, chopped tomatoes, and mutton and give 2-3 whistles. And, allow it to cool. (Mutton should be clean and washed nicely)
  • Then, add some water and sauté till the water is reduced, and repeat the process for 2-3 times. It gives an amazing aroma.
  • Once the pressure is released, open the lid and add salt, turmeric powder, coriander powder, red chili powder and garam masala. Stir it nicely and sauté for 10 to 15 minutes on low flame.
  • Now, add little water or as per your requirement, stir it, and give 3 to 4 whistles and let it simmer for 7 to 8 minutes.
  • Last garnish with garam masala and coriendar leaves
