Pan Grilled Shahi Paneer


Shahi Paneer is a Cottage Cheese cooked in a spicy creamy sauce. This is a rich, delicious mughlai curry. Make this rich and flavourful dish to go with rotis, naan or pulao. Here i have pan grilled paneer before adding in the gravy .

Serves : 4
  • 6-7 nos for cashew nut paste:cashew nutsbroken

  • 1 nos for onion paste: onion roughly chopped

  • 1 nos green chili

  • 1/2 inch ginger

  • 2 nos cloves garlic

  • 2 nos green cardamoms

  • 2 nos cloves

  • 1/4 inch cinnamon stick

  • 1/3 cups water

  • 250 gms for shahi paneer preparation :paneer - cut into cubes or triangles .grilled pan fried

  • 3 tbsp oil/ghee/ butter

  • 2 cups tomato pureed

  • 1 pinch salt to taste

  • 1 tsp red chili powder

  • 1 tsp coriander powder

  • 1/4 tsp black pepper powder

  • 1 tsp garam masala

  • 1 tsp kasoori methi (dried fenugreek leaves)lightly crushed

  • 5-6 nos saffron

  • 1 tsp paneer masala powder

  • 2 tbsp cilantro or coriander leaves finely chopped


  • Method Of making Pan Grilled Paneer. : Cut paneer into desired shape and size. Drain out the water completely
  • In a bowl, mix salt, turmeric powder, red chilli powder and tomato ketchup . Apply marinade evenly on both sides of the paneer pieces and keep aside for 15 minutes.
  • Heat 1 tsp oil in a grill pan. Arrange marinated paneer slices and grill on a medium heat, until golden colour on both the sides (approximate grilling time is 7 minutes for each side).
  • Your pan grilled paneer is ready ....this wud b immersed in the onion tomato cashew gravy .
  • Making cashew paste : Soak the cashew nuts in a warm water for at least 15 minutes. meanwhile prep other ingredients.
  • After 15 minutes make smooth paste out of it and keep it aside.
  • Making onion Tomato Paste : Take all the paste ingredients in a pan. Add water, turn the heat on high.
  • Bring to a boil. Once it starts boiling lower the heat to medium.
  • Let it simmer for 8-10 minutes or till onions get soft and translucent. Turn off the stove and let it cool down slightly.
  • Once it is cooled, make smooth paste out of it using blender or grinder.
  • Also puree the tomatoes in the same grinder.
  • Making shahi paneer recipe:Heat the oil in a pan on medium heat. Once hot add prepared onion paste.
  • Cook till moisture evaporates, about 4-5 minutes.
  • Then add tomato puree. Stir well and let it cook.
  • Cook till all the moisture evaporates and oil starts to ooze out from the sides. Do stir in between.
  • Add salt, black pepper powder, red chili powder and coriander powder.
  • Mix well and cook for a minute.
  • Now add cashew nut paste and mix.
  • Immediately add water, otherwise it starts to stick to the pan because of the cashew paste.
  • Stir well and let it simmer for 4-5 minutes.
  • Then mix in garam masala and crushed kasoori methi.
  • Now add saffron strands and stir.
  • Add paneer grilled pieces. Mix well and let it simmer for 2 minutes. Adjust the gravy consistency at this time if needed.
  • Add Paneer Masala powder and sprinkle chopped coriander leaves.
  • Enjoy the aroma of Paneer Masala Magic
  • Mix well and it is ready to serve.
