First of all sprinkle some chilli powder and chat masala on the ridge gourd slices arranged on a plate.
Mix all ingredients except the oil.
Add enough water to make a smooth batter of pouring consistency.
Heat oil, pour a drop of mixture, if it comes up at once, oil is ready for frying.
Dip the torai slices into the batter and drop into the hot oil.
Flip them once till golden in colour and remove from oil.
Drain on an absorbent paper, its ready to serve with curd dip or any sauce of your choice.
Tip - another option is you can make a besan batter and make ridge gourd fritters or Torai pakode.
